The Pearls of Nutrition- Pearl Millet (Bajra)

Bajra or pearl millet, you must have heard this name before (naam to suna hoga), especially during winters if you are residing in or travelled north or western India during winters.

If not heard then let me introduce you to this appetizing and delectable millet, as the name also goes, pearl millet. Pearl millet is commonly known as Bajra in our country. I am born and brought up in Rajasthan and during winters, my grandmother used to make her coveted dishes, which used to delight us and kept us intact during winters. One of her mouth smacking dishes that come to my mind is a perfect combination of Garam Bajra roti, ghee and gud (jaggery). AHAA…A natural delicacy! A winter in Rajasthan is incomplete without eating this delicacy. This diet can be afforded by any household and yet nutritious. The slow release of emery gives the feeling satiety for longer periods. During summers my grandmother used to cook this this pearl of nutrition with yogurt and water, embellished with asafetida (hing) mad some fennel seeds, and called as, “ghaat”. In the hot and thrusty days of summer this dish works to sustain the cold in body.

Bajra is also known as Kambu in south India, having a low glycemic index is one of the prime foods given to lower diabetes. Its impenetrable fibre helps in the slow release of carbs into your system, thus providing energy over a longer period of time and keeping your blood glucose in check. Contrary to the other grains and millets, Bajra or Kambu has a distinct sweet taste to it. Take it into powder form, mixed with water and boiled makes a perfect porridge. It can be used as a sustainable meal for the children and elder who are unable to eat, are ill or simply don’t want to waste time chewing their food. For those having gluten intolerance, this could serve as a perfect alternative. It is also a staple diet in Maharashtra.
