Millets are known to be one of the oldest, nutritious crops to humans. They are drought-resistant resistant crops which can be grown in dry land and cultivated in Asia since thousands of years. One such category of millet is Little Millet, as the name goes, is not known little for its beneficial & nutritious components. It is believed to have originated in India.

In my childhood, I have always turned away from eating these nourishing & nutritious delicacies that my mother used to make but nowadays I just somehow especially look for this traditional and authentic treats with modern taste. Little millet can be used to eat as boiled grains, mixed with vegetables for making salad, for adding crunch to your chapattis, muffins and breads. It can also be used in preparing baby food, as porridge and as a stuffing for paranthas or rolls. The little millet or samai is mostly consumed as rice. Any recipe that demands staple rice can be prepared using samai. It has the smaller grains, so it cooks faster than other millets.

It is known as Samai in Tamil word, as Kutki or Shavan in Hindi, Gajro or Kuri in Gujarati, and Sava in Marathi. Little millet is suitable for all age groups. The little millets have indefinite storage life, are practically devoid of pests.

Health benefits of little millet: Among cereals, little millet has been found to have the highest amount of fiber. Its crude fiber content is nearly twice that of other cereals. It is rich in phenolic compounds that show antioxidant activity. It is an excellent source of iron. It is also gluten free, like other millets. It makes up for the lack of wholegrain fiber in celiac diets. It is also a rich source of the essential amino acids.
